Preserving Vitamins in Food
Melinda T. Wills, author for ABC News, questions vitamin preservation in foods in an article titled "Preserving Vitamin Content in Food". Foods do not retain their vitamins over time, especially fresh fruits and vegetables, and many factors can cause this, such as heat, light, or air. Vitamins are described as sensitive, and are only at full capacity in the food for about a few days. So it is recommended to buy fresh produce every other day, or, because of a busy schedule, buy freezer-packaged food, because the vitamins are well-reserved in the food. The author closes the article by saying that eating those recommended servings are more important as ever, because one "serving" of something could not have the maximum nutrients in it that you think it has. This was all new information to me, and I will seriously start reconsidering my "servings" because I usually do not eat the max serving, I usually think that one will be enough. In conclusion, this article was probably a wake-up call to most people, because I wouldn't think many people are eating the amount of servings they should be, and are, in turn, getting less nutrients than they should be.
